Green Pea and Mint Soup
Ingredients
- 2 cups of vegetable broth
- 3 cups of fresh blanched green peas or thawed frozen green peas
- 1/2 cups ofchopped green onion (or ramps if you can get them)
- 1 teaspoon of salt
- 1/4 teaspoon of fresh black pepper
- 2/3 cup mint leaves
- 2 teaspoon 0f freshly squeezed lemon juice + more to taste
- 1/2 cups of plain yogurt or sour cream
Directions
Peas, along with asparagus and ramps, are a few of the best parts of Spring.

How To
- Add broth, peas, green onion, salt & pepper to the blender jar, and press the soup button (alternatively, run blender on high setting for 5 minutes)
- After completing program (about 5 minutes), blender will stop
- Add mint and lemon juice and pulse for 15 seconds
- Taste soup and adjust seasonings to your preference
- Serve soup, garnishing with sour cream or yogurt and fresh mint
